Internship Rationale
I will be interning under Chef Briar Handly at his restaurant, Handle, in Park City. There I will be learning from the various aspects of kitchen prep work, working on the line, menu planning, and restaurant management. Chef Handly is a great chef for me to learn from because he has become wildly successful at such a young age. Chef Handly recently left his position as Executive Chef at the very esteemed and exclusive, Talisker on Main in Park City. After leaving Talisker, Chef Handly opened Handle right down the street from Talisker and has experienced great success in only a few short months.
I feel that I have a lot to learn from Chef Handly because he is an extremely creative and experienced chef. Also, I’m very excited to be working under someone so successful but still very young. I plan for my internship at Handle to teach me much more about both front and back of the house management as well as learn more about cooking in a restaurant, as I plan to attend culinary school immediately following graduation from the University of Utah.
